Start with the crema so the flavors have time to meld. Combine sour cream, cilantro, lime juice, and seasonings in a food processor. Blend until smooth, about 20 seconds. Add a splash of milk if you want a thinner sauce. Chill until ready to serve.

Heat a cast-iron skillet over medium-high. Remove the chorizo casing if necessary, break it into small pieces, and cook until fully browned and crispy, 5–7 minutes. Transfer to a bowl and set aside; reuse the skillet to warm tortillas.

To me, the best scrambled eggs are simple. You don’t need much (just butter and eggs) to get the fluffiest, creamiest scrambled eggs ever. It’s all in the technique!

Years ago, my husband, Jon, and I were watching one of Gordon Ramsay’s cooking shows (maybe Hell’s Kitchen, I can’t remember), and what he said about scrambled eggs stuck in my brain forever: “On the heat, off the heat, on the heat, off the heat. Say it aloud in the Gordon Ramsay voice, and you’ll never forget it. 😂

To make the eggs, melt butter in a non-stick pan over medium-low heat. Stir in the eggs with a rubber spatula or wooden spoon. When eggs begin to stick slightly, remove from heat, stir, and repeat until fluffy and creamy. Combine with the cooked chorizo. Taste and add salt or pepper if desired!

Wipe the skillet clean, leaving a touch of chorizo grease for flavor. Heat corn tortillas 1–2 minutes per side until soft and pliable. For extra-soft tortillas, wrap in a paper towel and microwave for 20 seconds.

Warm them in a dry skillet or the same pan used for chorizo, 1–2 minutes per side, just until soft and pliable. Avoid overcooking to prevent crispiness.

What kind of meat is chorizo?

Chorizo is a seasoned sausage traditionally made from pork, though beef versions also exist. It’s typically flavored with spices like paprika, chili powder, coriander, and oregano, which give it its bold, slightly spicy flavor and red color. For this recipe, I use fresh Mexican chorizo, which is uncured and meant to be cooked before eating (not smoked like Spanish chorizo). I usually buy pre-seasoned chorizo, but you could also try making homemade chorizo seasoning if you wish!

Can I use a different type of sausage?

Yes! Breakfast sausage, Italian sausage, or even plant-based sausage works. Flavor will differ slightly.

    • 1/2 pound chorizo ground sausage
    • 2 tablespoons salted butter

    • 8 tortillas (I like to use corn for this recipe)

    CILANTRO LIME CREMA

    • 1 cup sour cream
    • 1/3 cup (a handful of) cilantro, stems removed
    • 2 tablespoons freshly squeezed lime juice
    • 1/2 teaspoon fine sea salt
    • 1/2 teaspoon freshly cracked black pepper
    • 1/2 teaspoon garlic powder
    • a splash of milk (optional to thin out the sauce)

    • 1/4 cup cotija cheese, crumbled
    • half of a yellow onion, small dice

    1. Let the chorizo sit at room temperature for 15–20 minutes. Meanwhile, make the cilantro lime crema. Combine sour cream, cilantro, lime juice, and seasonings in a food processor. Blend for about 20 seconds until smooth. Stir in a splash of milk if you prefer a thinner sauce. Refrigerate until ready to serve.

    2. Heat a cast-iron skillet over medium-high. Break up the chorizo with a wooden spoon and cook until fully browned and crispy, about 5–7 minutes. Transfer to a bowl and set aside; you’ll reuse the skillet for warming tortillas.
