I love meal-prepping these Veggie Egg Bites on Sunday and having them on hand for a quick breakfast or snack whenever we get hungry during the day. They’re also a great addition to a brunch spread.
They are so delicious because they combine creamy eggs, tangy Greek yogurt (or use cottage cheese), cheddar cheese, flavorful seasonings, and fresh herbs and vegetables in every bite!

I know they have similar egg bites at Starbucks. Don’t get me wrong, it is a nice snack/breakfast option for them to offer. However, homemade is always best, and making a batch of twenty-four is much cheaper than paying $6 for two egg bites!

I’m usually a whole-milk yogurt kind of girl, but non-fat yogurt works better in this recipe because it makes the veggie egg bites less moist.
Mushrooms – Mushrooms bring a savory, umami flavor that complements the richness of the eggs and cheese. They’re also low in calories and high in antioxidants, vitamins, and minerals. *An ingredient I can use more often now because, after 16 years together, my husband finally came to his senses and likes mushrooms! 🙌🏽
Scallions – Scallions deliver a mild, onion-like flavor with a hint of freshness. Bonus: they also contain prebiotic fibers that support digestion!
Red (or any color) Bell Pepper – Red bell peppers add a pop of color, crunch, and natural sweetness to the bites. They’re loaded with vitamins A and C, as well as antioxidants.

First, preheat the oven to three-hundred fifty degrees Fahrenheit (one-hundred seventy-five degrees Celsius).
In a large bowl, crack the eggs and add the yogurt and seasonings. Whisk together until fully incorporated.
Chop your chosen veggies and shred the cheese. Stir this together with the eggs until well combined.
Spray the USA Pan muffin pan with cooking spray and fill each to the top with egg mixture.
Bake the veggie egg bites in the preheated oven for twenty to twenty-one minutes or until the egg is fully cooked but not rubbery!
Let them rest in the pan for five minutes before serving or transferring them to a container for storage.
