These chorizo breakfast tacos are made with fluffy scrambled eggs, crispy Mexican chorizo, and warm corn tortillas, then finished with a garlicky cilantro lime crema. They’re quick to make, packed with bold flavor, and perfect for an easy weekend brunch or make-ahead breakfast for busy mornings.
Ingredients
CHORIZO BREAKFAST TACOS:
- 1/2 pound chorizo ground sausage
- 2 tablespoons salted butter
- 4 large eggs
- 8 tortillas (I like to use corn for this recipe)
CILANTRO LIME CREMA
- 1 cup sour cream
- 1/3 cup (a handful of) cilantro, stems removed
- 2 tablespoons freshly squeezed lime juice
- 1/2 teaspoon fine sea salt
- 1/2 teaspoon freshly cracked black pepper
- 1/2 teaspoon garlic powder
- a splash of milk (optional to thin out the sauce)
ADDITIONAL TOPPINGS:
- 1/4 cup cotija cheese, crumbled
- half of a yellow onion, small dice
- handful of cilantro, roughly chopped
- lime wedges
Instructions

Let the chorizo sit at room temperature for 15–20 minutes. Meanwhile, make the cilantro lime crema. Combine sour cream, cilantro, lime juice, and seasonings in a food processor. Blend for about 20 seconds until smooth. Stir in a splash of milk if you prefer a thinner sauce. Refrigerate until ready to serve.

- Heat a cast-iron skillet over medium-high. Break up the chorizo with a wooden spoon and cook until fully browned and crispy, about 5–7 minutes. Transfer to a bowl and set aside; you’ll reuse the skillet for warming tortillas.

- Melt butter in a non-stick pan over medium-low heat. Stir in the eggs with a rubber spatula. When eggs start to form and stick slightly, remove from heat, stir, and repeat until eggs are fluffy and creamy. Combine with the cooked chorizo. Taste and adjust with salt and pepper if needed.

- Wipe out the skillet, leaving a touch of chorizo grease. Heat tortillas 1–2 minutes per side until warmed through and pliable. For a softer option, wrap in a paper towel and microwave for 20 seconds.
