How to Make Orange Poppyseed Muffins

The Instructions
Making these Orange Poppyseed Muffins is easy! Follow these simple steps:
- Preheat the oven to 375°F (191°C).
- Measure and add the flour to a mixing bowl (preferably by grams using a food scale for accurate measurement, or spooned and leveled). Add the poppyseeds, ground flaxseeds, baking powder, baking soda, cinnamon, and salt and whisk. Whisk together the eggs, maple syrup, orange juice, vanilla, and orange zest in a separate bowl, then slowly stream in the melted butter while whisking. Blend the cottage cheese in a food processor or blender until smooth and whisk it into the wet ingredients.
- Add a bit of the dry ingredients to the wet. Fold/mix gently until just incorporated. Repeat until the ingredients are all combined, and you don’t see any more loose flour. Some small clumps are normal. Do not overmix (see: What Happens if you Overmix Muffin Batter)!
- Spray a muffin pan with cooking spray and add an equal amount of batter to each tin. You can use muffin liners, but I like the muffins better without them! Bake the muffins at 375°F (191°C) for 5 minutes, then lower the temperature to 350°F (177°C) and bake for another 14 minutes or until a toothpick test comes out clean.
- Remove the muffins from the oven and let them sit in the pan for 5 minutes. Gently wiggle the muffins out of the cups or hit the back of the pan to pop them out. Let them cool on a cooling rack.

While the orange yogurt drizzle adds extra flavor and a creamy texture, you can skip it if you prefer.
Here’s how to make it (it’s super simple):
- In a small bowl, whisk together all the ingredients until smooth. Store this in the refrigerator and drizzle on a muffin before eating!

Yes, but the texture and protein content will change slightly. Cottage cheese adds moisture, tenderness, and a big protein boost while keeping the muffins light. If needed, you can substitute an equal amount of full-fat Greek yogurt for a similar protein level or unsweetened applesauce for moisture (lower protein). I recommend blending either substitute smooth, just like the cottage cheese.

- 1 1/4 cup (150 g) all-purpose flour
- 3/4 cup (105 g) whole-wheat flour
- 1/4 cup poppyseeds
- 1 tablespoon ground flaxseeds

- 3 large eggs
- 2/3 cup pure maple syrup
