Fall brings some of the coziest, most flavorful produce of the year. Squash is everywhere this season. Think butternut, acorn, delicata, and of course, pumpkin. They’re great roasted, puréed into soups, or stuffed with grains and veggies. Apples are another fall staple. They’re amazing in desserts, but also work beautifully in savory meals, especially paired with pork or roasted root vegetables.
Sweet potatoes shine this time of year and are easy to add to weeknight meals. Roast them, mash them, or use them in casseroles. Brussels sprouts are at their best in the fall, too; roasting brings out their sweetness. One of my favorites is my Roasted Brussels Sprouts Salad with Bacon and Blue Cheese.
Root vegetables like carrots, parsnips, and beets become sweeter when roasted. Try them in my Roasted Beetroot and Pumpkin Salad. Mushrooms are also in season and add deep, earthy flavor to pastas and risottos. My Stuffed Mushrooms with Crab are a great starter!
Leafy greens like kale and Swiss chard hold up well in soups and sautés. Swiss chard is delicious in my Easy Italian Wedding Soup. Cauliflower and broccoli are also fall favorites; try my Crispy Cauliflower Bites or Broccoli Pomegranate Salad for colorful seasonal sides. And if you’re cooking with cabbage, my Stuffed Cabbage Rolls and Chicken Manchow Soup are perfect cozy fall dinners.
Warm spices (cinnamon, nutmeg), herbs like sage, thyme, and rosemary, plus maple, apple cider, and balsamic, pair beautifully with fall produce. These flavors help bring out the natural sweetness of seasonal ingredients and work well across fall dinner recipes.
Fall ingredients hold up well in the fridge. Roast a big tray of vegetables, cook a batch of grains, and prep proteins ahead. Soups, casseroles, and hearty salads (like roasted veggie salads) store and reheat especially well.
Chicken, pork, turkey, spicy sausage, and salmon all pair naturally with fall flavors. For a cozy fall dinner, try roasting chicken with root vegetables or serving pork chops with apples.
Keep squash and potatoes in a cool, dark spot. Store leafy greens wrapped in a paper towel in the fridge. Apples last longest when chilled. Avoid washing produce until right before use to prevent moisture-related spoilage.
