How to Make Lamb Kofta Wraps (With Video)
Make the Lamb Kofta
Preheat the oven to 400°F (204°C).
Mix all lamb kofta ingredients using your hands or a stand mixer until just combined. Lightly oil a sheet pan and your hands, then roll the mixture into golf ball–sized meatballs.
Bake for 15 minutes, then let the lamb kofta rest on the pan for 5–10 minutes to lock in juices.
Prepare the Cucumber Radish Salad
Dice the cucumber and radishes, chiffonade the mint, and whisk together the dressing ingredients. Toss everything together and refrigerate until ready to serve. This step can be done ahead of time for easy meal prep.
Blend the Creamy Feta Yogurt Sauce
Now we’ll make the creamy feta yogurt sauce. It’s the perfect addition to the lamb kofta wraps, but can also be used as an addition to my Mediterranean Charcuterie Board, a dip for vegetables, pasta sauce, sauce on a Mediterranean panini, salad dressing, and more.
To make it, blend feta, Greek yogurt, lemon juice, water, and mint until smooth. Add a splash of water if needed. Chill until serving.
Assemble the Lamb Kofta Wraps
Serve everything family-style: warm lamb kofta, romaine or bread, cucumber radish salad, feta yogurt sauce, pistachios, and lemon wedges. Let everyone build their own lamb kofta wrap just how they like it.
Serving the Lamb Kofta Wraps
I like to serve the Lamb Kofta Wraps with Cucumber Radish Salad family-style, so everyone can grab what they want and how much of each component they prefer.
Not pictured are the chopped pistachios and lemon wedges, which complete this balanced and delicious, quick, and easy weeknight meal that I hope becomes a part of your rotation! 🥬
