There are so many ways to customize the avocado cottage cheese toast! I already mentioned two of my favorites, but here are some more flavor profiles you may like to try to keep it fun and new:
Mediterranean: Sliced cucumbers, cherry tomatoes, kalamata olives, and a drizzle of olive oil or chili oil.
Pesto Tomato: Basil pesto sauce, tomatoes (heirlooms are pretty!), and freshly cracked black pepper.
Fig & Prosciutto: Sliced figs or fig jam, rolled prosciutto, and a drizzle of honey.
Spicy & Smoky: A sprinkle of smoked paprika with sliced pickled jalapenos, chili crisp, and/or hot sauce with cilantro.
These options are a bit fancier (but still easy to make), making them perfect for weekend brunch, special occasions, or just when you want to be a little extra to brighten your weekday mornings. 😉

Choosing the Right Bread
The key to great avocado cottage cheese toast is starting with the right bread! You need something sturdy enough to hold all the toppings without falling apart.
When it comes to homemade bread, my go-to recipe is this homemade sourdough— it has a nice chew, is the perfect texture, and toasts up perfectly. Other great options are rustic rye sourdough bread, and, if you don’t have sourdough on hand, this Artisan bread is a good choice!

If you’re not into baking bread, you can also visit your local bakery and find a beautiful loaf, I’m sure. 🥖
Whatever bread you choose, just make sure it’s strong enough to handle the avocado cottage cheese toast layers without going soggy.
How to Make Perfect Boiled Eggs (Soft or Hard-Boiled)
Whether you prefer a jammy center or a fully cooked yolk, these methods will always get you the perfect egg!


1. Instant Pot Method: Add 1 cup of water to the bottom of the pot, place the eggs on the trivet, and secure the top on the Instant Pot.
This is my favorite method. It’s especially helpful when I’m making deviled eggs or need a lot of boiled eggs at a time, but I still do it even if I need two eggs.
On busy cooking holidays, it’s helpful because it saves space on the stove! I’ve also found the shells to peel using this method. You can watch me make eggs faster in the Instant Pot here on Instagram. 😊
- For jammy eggs: Pressure cook on high for 3 minutes, then quick-release and transfer to an ice bath.
- For hard-boiled eggs: Pressure cook on high for 5 minutes, then quick-release and chill in an ice bath.
2. Stovetop Method: Place eggs in a pot and cover them with cold water. Bring to a boil, then cover, turn off the heat, and let them sit. Finish with an ice bath to stop the cooking and make peeling easier!
- Soft-boiled: 6–7 minutes for a jammy yolk
- Hard-boiled: 10–12 minutes for a fully set center
3. Steam Method (Stovetop): Bring 1–2 inches of water to a boil in a saucepan. Place eggs in a steamer basket, cover, steam, then add to an ice bath. This method gives consistent results as well.
- Soft-boiled: 6–7 minutes
- Hard-boiled: 11–12 minutes
In addition to these methods, you can also poach the eggs. No matter how you cook them, eggs are the ultimate topping for avocado cottage cheese toast!
