These veggie egg bites combine creamy eggs, tangy Greek yogurt, savory cheese, flavorful seasonings, and fresh herbs and vegetables in every bite. They’re so delicious and perfect for meal prep snacks or breakfast!

Veggie Egg Bites
- cooking spray
- 9 large eggs
- 3/4 cup plain non-fat Greek yogurt
- 1/2 cup cheese (such as pepper jack, Colby jack, cheddar, etc.), freshly shredded
- 1 cup vegetables (such as mushrooms, bell pepper, spinach, and scallions), finely chopped
- 2 tablespoons fresh herbs (such as parsley or chives), finely chopped
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/2 teaspoon fine sea salt
- 1/2 teaspoon black pepper
- 1/4 teaspoon ground turmeric
Instructions
- Preheat the oven to 350 degrees F (175 degrees C). In a large bowl, crack the eggs and add in the yogurt and seasonings. Whisk together until fully incorporated. Chop your chosen veggies and shred the cheese. Stir this together with the eggs until well combined.

- Spray the muffin pan with cooking spray and fill each to the top with egg mixture. Bake the veggie egg bites in the preheated oven for 20-21 minutes or until the egg is fully cooked but not rubbery. Let them rest in the pan for 5 minutes before serving or transferring them to a container for storage.

Notes
- For watery vegetables like zucchini, mushrooms, or spinach, you can saute then drain them first to avoid excess moisture and to prevent sogginess.

- I’m usually a whole milk yogurt kind of girl, but I found that a thick, non-fat yogurt works better in this recipe because it makes the egg bites less moist.
