Description
These Orange Poppyseed Muffins are soft, fluffy, and naturally sweetened with maple syrup and fresh orange juice. Made with cottage cheese, whole wheat flour, and poppy seeds, they’re a high-protein muffin option that’s perfect for breakfast, snacks, or weekly meal prep. Bright citrus flavor, wholesome ingredients, and an optional orange yogurt drizzle make these muffins both nourishing and delicious.

Orange Poppyseed Muffins:
- 1 1/4 cup (150 g) all-purpose flour
- 3/4 cup (105 g) whole-wheat flour
- 1/4 cup poppyseeds
- 1 tablespoon ground flaxseeds
- 3 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1 1/4 teaspoon cinnamon
- 1 teaspoon fine sea salt
- 3 large eggs
- 2/3 cup pure maple syrup
- 1/2 cup orange juice, freshly squeezed
- 3 tablespoons unsalted butter, melted (or swap 1:1 olive oil, coconut oil, or avocado oil)
- 2 teaspoons vanilla extract
- 1 teaspoon orange zest
- 1 cup small curd 4% milkfat cottage cheese, blended until smooth
Orange Yogurt Drizzle (Optional):
- 1/2 cup plain Greek yogurt
- 2 tablespoons orange juice
- 1 tablespoon pure maple syrup
- 1/2 teaspoon vanilla extract
- 1/2 teaspoon orange zest
- 2 tablespoons organic powdered sugar (optional - to thicken and sweeten)
Instructions
- Preheat the oven to 375°F (191°C).
- Measure and add the flour to a mixing bowl (preferably by grams using a food scale for accurate measurement, or spooned and leveled). Add the poppyseed, ground flaxseeds, baking powder, baking soda, cinnamon, and salt and whisk. In a separate bowl, whisk together the eggs, maple syrup, orange juice, vanilla, and orange zest, then slowly stream in the melted butter while whisking. Blend the cottage cheese in a food processor or blender until smooth and whisk it into the wet ingredients.

- Add a bit of the dry ingredients to the wet. Fold/mix gently until just incorporated. Repeat until the ingredients are all combined and you don’t see any more loose flour. Some small clumps are normal. Do not overmix!

- Spray a muffin pan with cooking spray and add an equal amount of batter to each tin. You can use muffin liners, but I like them better without them as they get golden brown and delicious on the outside! Bake the muffins at 375°F (191°C) for 5 minutes, then lower the temperature to 350°F (177°C) and bake for another 14 minutes or until a toothpick test comes out clean.

- Remove the muffins from the oven and let them sit in the pan for 5 minutes. Gently wiggle the muffins out of the cups or hit the back of the pan to pop them out. Let them cool on a cooling rack.

- Make the orange yogurt drizzle (if using). In a small bowl, whisk together all the ingredients until smooth. Store this in the refrigerator and drizzle on a muffin before eating!
